Red oil extraction, also known as crude palm oil (CPO) extraction, involves utilizing the fruit of the oil palm to obtain oil that is rich in carotenoids, which gives it a red hue. This process includes several steps: sterilizing (using steam cooking to halt enzyme activity), threshing (detaching fruit from the bunches), digesting (crushing the fruit), pressing (mechanical extraction), and filtering/clarifying to eliminate solids, resulting in unrefined oil suitable for cooking or further processing for other applications. Traditional methods consist of boiling, pounding, and manual separation, while modern mills utilize specialized machinery for improved efficiency.
Key Steps in Modern Extraction
Sterilization: This step involves steam-cooking palm fruit bunches to deactivate lipase enzymes (which prevents rancidity) and to soften the fruit for easier separation.
Threshing: This process mechanically separates the red palm fruits from the primary bunches (empty fruit bunches).
Digesting: The fruits are mashed into a paste to break down cellular structures, paving the way for oil extraction.
Pressing: Screw presses are employed to extract oil from the mashed pulp.
Clarification & Filtration: The oil is separated from water and solid contaminants using settling tanks, centrifuges, and filters.
Drying: This final step entails eliminating any remaining moisture from the oil.
What Gives It Its “Red” Color?
The oil has its deep red/orange hue primarily due to high concentrations of beta-carotene and other carotenoids found in the fruit’s mesocarp (pulp).
Traditional and cold-pressed techniques preserve these nutrients, in contrast to refined palm oil, which is frequently bleached and deodorized.
